Ingredients:
2 Portabella Mushrooms
½ Baked Sweet Potato – Colors will vary. That happens in nature.
1 Shallot or Small Onion
1 Clove Garlic
10-12 Chives
1 Kale Leaf, Destemmed & Chopped
1 Egg
2 Tsp Grapeseed Oil, Divided
1 Tsp Garlic & Herb Seasoning (No Salt or Preservatives)
1 tsp Paprika
½ Tsp Coriander
Directions
Turn oven to 350°F
Wash and blot mushrooms. Cut out stem. Rub ½ the oil on the inside and outside. Bake for 10 -12 minutes. Pour out juices and set aside to be stuffed.
While mushrooms bake, throw everything BUT the sweet potato in blender. Mix until combine. Then add sweet potato and blend until creamy perfection.
Stuff herbed sweet potato stuffing into mushrooms and bake for another 10-12 minutes, until top is toasted golden brown perfection.
